Who says pizza can't be healthy? This is simply the BEST cauliflower pizza crust recipe ever! Pizza the healthy way.

 1 Cauliflower, riced
 1 cup Cheddar Cheese, Grated
 1 tablespoon Psyllium Husk
 1 Egg, beaten
 1 teaspoon Italian Herbs
 1/2 teaspoon Garlic
 1/2 teaspoon Salt
 1 cup Mozzarella Cheese (for topping)
 Pizza Sauce & additional toppings of your choice

For Base:

To rice the cauliflower, cut florets into chunks and pulse in a food processor until you see rice-like bits. You could also use a cheese grater to produce the tiny pieces. Do not over process, you don’t want mush.

Microwave the riced cauliflower in a bowl for 5-8 Minutes (No need to add water). After microwaving, transfer riced cauliflower to a clean dish towel and wrap the sides around the cauliflower pressing out excess water. This drying process is important!

One large head of cauliflower will yield about 3 cups of riced cauliflower. Use it to make more pizzas immediately, or store in the refrigerator for 2-3 days.

Mix cheddar, herbs, garlic, salt, husk, cauliflower and egg in ball.

Preheat oven to 220°C. Spray a cookie sheet with non-stick cooking spray or brush with olive oil..

Place your “dough ball” on the cookie sheet and pat into thin pizza base.

Bake your dough at 220°C for 15 Minutes.

Remove from oven. Add tomato sauce or basil pesto, mozzarella cheese, and your favorite pre-cooked toppings to your pizza. Place pizza under grill just until cheese is melted, be sure to keep an eye on it!
