Get Healthy with low-carb, cauliflower rice. It's light and fluffy, like couscous. It's also tender and has just the right amount of chew, like rice.

 2 Cauliflowers, florets
 4 medium freezer bags

Place cauliflower into the food processor and pulse until the consistency resembles rice. Be careful not to over process.

Scoop about 2 cups of riced cauliflower into each freezer bag.

Press air out of bag and seal.

Flatten bags and stack to freeze.

Microwave frozen cauliflower rice in a heatproof bowl, for four minutes on High, mixing the ‘rice’ half way through cooking. This method gives the rice a nice, neutral flavour, perfect for serving with a curry or tagine.
