Using eggplant as the crust, these mini-pizzas can be topped with whatever you like on your pizza. The cheesy-good recipe turns the tasty pairing of eggplant and pizzas into low-carb, Keto and low-glycemic perfect treat.

 2 Eggplant, sliced 1 inch thick
 1 can Tomato and Onion
 1/2 teaspoon Himalayan Salt
 1/2 teaspoon Pepper
 16 slices Mozzarella Cheese
Topping Options
 16 Cherry Tomatoes, sliced
 1 cup Spinach Leaves
 Feta Cheese
 Olives
 Diced Bacon, Salami or Ham
 Peperdews

Preheat your oven to 200°C.

Arrange the sliced eggplants on baking trays. Sprinkle with Himalayan salt and bake for 15-20 minutes.

Remove the bake eggplant from the oven and turn your broiler on. Spread 1 tablespoon of tomato sauce over each eggplant round followed by one slice of cheese. Arrange choice of toppings over the cheese and grill for 3-5 minutes. Make sure you keep a close look while the eggplant is under the broiler as they can burn really fast.
