A great high fiber, crunchy, nutritious, and tasty snack. Good with dips, spreads, or just plain. These crispy low-carb seed crackers are great for breakfast or served with the evening's cheese platter.

 ⅓ cup Coconut Flour
 1 cup Mixed Seeds (raw flaxseed, sunflower, sesame, chia, pumpkin or poppy seeds)
 2 tablespoons Sesame Seeds
 1 tablespoon Psyllium Husk
 1 tablespoon Mixed Herb
 1 teaspoon Sea Salt
 340 ml Boiling Water
 4 tablespoons Extra Virgin Olive Oil or Avocado Oil

Preheat oven to 150°C. Line two half-sheet pans with parchment paper and set aside.

Fry Sesame Seeds in oil until they turn brown and start popping.

Mix all dry ingredients in a bowl. Add boiling water, oil and sesame seeds. Mix together with a fork until the mixture thickens to a consistency of loose oatmeal, about 5 Minutes.

Spread out the dough thinly on a baking sheet lined with parchment paper. Sprinkle with sea salt.

Bake on the lower rack for about 45 Minutes, check occasionally. Let dry for another 15 Minutes, but pay attention as seeds are heat sensitive.

Turn off the oven and let the crackers dry in the oven. Break into pieces and serve or store.
