Healthy Homemade mayonnaise in 1 minute, it's so versatile! This Mayonnaise is a great Miracle Whip alternative perfect as a Salad Dressing, dipping sauce key ingredient or paired with your breakfast eggs, grilled meat & vegetables!

 1 cup Avocado Oil or Light Olive Oil
 1 Egg (room temperature)
 1/2 teaspoon Dijon Mustard (room temperature)
 1 teaspoon Water
 2 teaspoon Xylitol Sweetener
 2 tablespoon Lemon Juice
 1/2 teaspoon Salt
 1 pinch Garlic Powder
 1 pinch Paprika

In a large jar, pour in the oil.

Add egg to the oil.

Add mustard, water and lemon juice to the mixture.

Let all of the ingredients settle for 1 minute.

Take the immersion blender and let it touch the bottom of the container, piercing the egg yolk.

Turn the immersion blender on and VERY, VERY slowly move the blender up to the top of the mixture and down, until all of the oil has emulsified. This will take anywhere between 15-30 seconds!

Store in an airtight container in the refrigerator for up to 10 days.
