Perfect for a starter or light main whip together this delicious Spicy Mussel Soup in only 15 minutes.

 2 tablespoons Butter
 2 teaspoon Garlic
 1 can Whole Peeled Tomatoes
 2 can Tomato and Onion Relish
 Coarse Sea Salt and freshly ground pepper
 1 1/2 cups Chicken Stock
 1/2 cup Wine (optional)
 4 tablespoon Basil, chopped
 2 teaspoon Chili, chopped
 500 gm Black Mussels (or Mussel Meat)

Melt butter in a stockpot over medium heat. Cook onion, basil, chili and garlic, stirring constantly, until soft and translucent, about 3 Minutes.

Add tomatoes, their juices, wine and stock. Season with salt and pepper and bring to a boil, then reduce heat and simmer 10 Minutes.

Add salt, pepper, mussels cook for 5 Minutes and serve.

Substitute the mussels for shrimp, crab or clams.
