 90ml Olive Oil
 1 Tablespoon Mustard Seeds (optional)
 12 Onions, Thin Sliced
 1 Tablespoon Crushed Garlic
 3 Chillies, Seeded and sliced
 3⁄4 cup Diet Sugar (can use Brown Sugar)
 90ml Brown Vinegar
 1 cup Balsamic Vinegar
 300ml Water
 1 teaspoon Salt
 1 teaspoon Black Pepper

Heat oil in large saucepan Add mustard seeds. When they being to pop, add onions, chillies. Sauté until glossy 10-15 minutes

 Add sugar and stir to dissolve

Add Remaining ingredients. Cook over low heat

30 minutes or until soft and gooey.

 Cool and spoon into clean glass jars.

Store in the refrigerator.
