Spanish Romesco Sauce is a magic sauce, a flavour packed, versatile sauce packing a punch. a brilliant way to add that extra something special to your savoury dishes!

 2 Roasted Red Bell Peppers
 1/2 cup Roasted Almonds
 2 tablespoons Tomato Paste
 2 1/2 tablespoons Red Wine Vinegar
 2 tablespoon Fresh Parsley
 1 teaspoon Garlic
 1 teaspoon Paprika
 1/2 teaspoon Cayenne
 1/2 cup Olive Oil
 1 1/2 teaspoon Salt
 Black Pepper

Add all ingredients to blender except olive oil and pulse until fairly well mixed. With the motor running, add oil in a steady stream until emulsified and almost smooth.

Taste and adjust seasoning if necessary!

Combine with mayo or yoghurt and spread it on your favourite sandwich.

Heat it gently + stir in cream + a bit of parmesan for a super pasta sauce.

Served alongside some roasted chicken for a phenomenal dipping sauce.

Straight up or mix with smooth cottage cheese as a dip.
