Delicious with cheese, serve it on a ploughmans platter or use them as chips with a dip. These crackers will be nice to dip into Baba ganoush

 1 cup ‘Ultimate Seed Mix’ (mix of pumpkin, sunflower, linseed and sesame seeds)
 1 cup mozzarella or Gouda cheese OR half
 Mozzarella and half cheddar
 1/3 cup grated Parmesan (optional)
 Salt and Pepper
 1 Egg
 2 tablespoons Melted Butter
 1 tablespoon Coconut Flour
OPTIONAL FLAVOURINGS:
 Dried chilli flakes
 Paprika
 Cumin
 Garlic

Heat oven to 190c.

These crackers aren’t very thin. They’re about 5mm thick. Because of the coarse texture of the seeds, you have less breakage if you make them this thickness.

Prepare a brownie pan, Cut a long strip of paper to cover the base and up two sides with baking paper (parchment) not wax paper. Grease well or use baking spray.

Combine all the ingredients and press into the base of the pan. Smooth the surface with the back of a spoon or a spatula. Cut into 16 squares before baking. This will make it easier to cut through them once baked.

Bake for 20 Minutes , or until done.

Allow to cool for five minutes. Cut through the lines of the pre-bake markings. Using the overhang strip of baking paper, lift it out of the pan onto a flat surface. Once cooled, store in an airtight container.
